1860

The sugar cane fields of Natal.

Indian indentured labourers were shipped to South Africa. They brought nothing but their families, their faith, and their spices. Over 160 years, their descendants built something extraordinary — a cuisine that fused the heat of Indian cooking with the soul of South Africa.

The bunny chow wasn't born in a restaurant.

It was born in resistance.

When Indian restaurant owners in Durban's Grey Street couldn't legally serve Black South Africans inside during apartheid, they hollowed out a loaf of bread and passed curry through the window.

An act of necessity became the most iconic dish in the country.

Now it's in Sydney.
